It’s edible indeed 

Centaurea Cyanus, commonly known as cornflower. It’s an annual plant and native to Europe. Cornflowers were once frequent weeds in the grain and cornfields but has declined dramatically in the wild in the last 60 years. The decrease is due to modern agricultural practices.

The flower is striking enough to have given its name to a colour (Cyan). Also the most valuable blue sapphires are called cornflower blue, having a medium-dark violet-blue tone. 

They make excellent cut flowers and are adored by insects, butterflies and bees. Known for their dreamy blue blossoms in the summer. It is an edible flower, but always make sure it is the right flower before consuming it.
